5 Easy-to-make Mug Cakes

It can be a struggle for those of us who have a relentless sweet tooth: Finishing off your delicious, filling meal with something sweet has always been a routine. For those who have time, they can bake a batch of cookies, brownies or cupcakes. If you have budget, you can just order your favorite dessert in that plush bakery. But what if you don’t have the time and the budget? Don’t be blue because here is the solution.

Make your own mug cake. It will only take you five minutes or less to make these delicious mug cakes. Remember to make sure that your mug is microwave-safe.

1. Chocolate Mug Cake

This is the most basic mug cake you can make in just two minutes. Just whisk ¼ cup flour, two tablespoons cocoa powder, five tablespoons sugar, and salt with one egg, three tablespoons each of milk and vegetable oil, and a splash of vanilla extract in a large mug until smooth. Pop it into the microwave for about two minutes or until puffed.

2. Chocolate Chip Cookie in a Mug

In a mug, melt one tablespoon butter in the microwave then stir in one tablespoon sugar, three drops of vanilla extract and a small pinch of salt. Stir in an egg yolk. Add a scant ¼ cup of all-purpose flour and stir. Add chocolate chips then stir again. Pop it in the microwave for 40-60 seconds.

3. Blueberry Mug Cake

In a large mug, mix a pinch of baking soda, 1/8 teaspoon baking powder, ¼ cup flour, two tablespoons granulated sugar, three tablespoons fat free milk and one tablespoon vegetable oil. Drop seven fresh blueberries in the mixture. In a separate bowl, combine a tablespoon of chopped cold butter, one and half tablespoon flour, two and half tablespoons brown sugar and a pinch of cinnamon, then top it over the first mixture. Cook in the microwave for around one minute.

4. Red Velvet Mug Cake

In a large mug, mix ½ tablespoon unsweetened cocoa powder, two tablespoons of sugar, 1/8 teaspoon baking soda and four tablespoons all-purpose flour with a tablespoon of fat-free milk, 1/8 teaspoon distilled vinegar, two tablespoons buttermilk, ½ tablespoon vegetable oil and a few drops of red food coloring. Pop it in the microwave for a minute. Let it cool. For cream cheese frosting, combine an ounce each of butter and cream cheese with four to six tablespoons powdered sugar and mix on a high speed until light and fluffy, then top it over the cooled cake.

5. Cheesecake Mug Cake

Mix in a large mug two tablespoons sour cream, two to four tablespoons sugar, two ounces softened cream cheese, one egg, ½ teaspoon lemon juice and ¼ teaspoon vanilla. Cook in the microwave for 90 seconds, stirring every 30 seconds. Refrigerate. Before serving, top it with blueberries and strawberries and nut meal or graham crumbs.
